Saltfish

Ingredients:
1 lb salted cod (saltfish)
1 medium onion, chopped
1 green bell pepper, chopped
2-3 cloves garlic, minced
2-3 tablespoons vegetable oil
1 teaspoon black pepper
1 teaspoon thyme
2-3 tomatoes, chopped
Scotch bonnet pepper (optional)
1 tablespoon chopped parsley (optional)
Instructions:
Boil or soak the saltfish overnight in cold water to remove excess salt. Change the water 2-3 times during the soaking process.
Drain the saltfish, and rinse it thoroughly under cold water. Cut the saltfish into bite-sized pieces, and set aside.
In a large frying pan, heat the vegetable oil over medium-high heat. Add the onion, bell pepper, and garlic, and sauté for 2-3 minutes, or until the onion is translucent.
Add the saltfish to the pan, along with the black pepper and thyme. Stir well to combine, and sauté for another 2-3 minutes.
Add the chopped tomatoes to the pan, and stir well. If desired, add a Scotch bonnet pepper for a spicy kick.
Reduce the heat to medium-low, and let the saltfish simmer for 10-15 minutes, or until the tomatoes have cooked down and the saltfish is tender.
Serve the saltfish hot, garnished with chopped parsley if desired. This dish pairs well with boiled green bananas, yams, or rice and peas.
