Jamaican jerk chicken is a bold and flavorful dish, famous for its smoky, spicy, and slightly sweet taste. The chicken is marinated in a blend of allspice, Scotch bonnet peppers, garlic, ginger, thyme, and other seasonings, creating a flavor that’s uniquely Jamaican. What makes it truly special is the way it’s cooked: traditionally over an open wood-fired grill called a jerk pit, often outdoors, which infuses the meat with a deep, smoky aroma that’s difficult to replicate elsewhere. Its popularity comes from this unforgettable flavor, its cultural roots, and the festive atmosphere that surrounds its preparation — it’s more than a meal; it’s a culinary experience that brings the spirit of Jamaica to life.


Ingredients:

  • 2 lbs chicken (thighs, drumsticks, or a mix)

  • 2–3 Scotch bonnet peppers

  • 1 tbsp allspice

  • 1 tsp cinnamon

  • 2 tsp thyme

  • 4 garlic cloves

  • 1-inch piece of ginger

  • 3 tbsp soy sauce

  • 2 tbsp brown sugar

  • Juice of 1 lime

  • Salt and pepper to taste


Instructions:

  1. Blend the peppers, allspice, cinnamon, thyme, garlic, ginger, soy sauce, brown sugar, and lime juice into a smooth marinade.

  2. Coat the chicken with the marinade and let it sit for at least 4 hours (overnight is best).

  3. Grill the chicken over medium heat until cooked through and slightly charred.

  4. Serve with rice, plantains, or your favorite sides and enjoy a little taste of Jamaica at home.
