Ingredients:
2 lbs chicken (thighs, drumsticks, or a mix)
2–3 Scotch bonnet peppers
1 tbsp allspice
1 tsp cinnamon
2 tsp thyme
4 garlic cloves
1-inch piece of ginger
3 tbsp soy sauce
2 tbsp brown sugar
Juice of 1 lime
Salt and pepper to taste
Instructions:
Blend the peppers, allspice, cinnamon, thyme, garlic, ginger, soy sauce, brown sugar, and lime juice into a smooth marinade.
Coat the chicken with the marinade and let it sit for at least 4 hours (overnight is best).
Grill the chicken over medium heat until cooked through and slightly charred.
