Jamaican Festival

Ingredients:

  • 2 cups of all-purpose flour

  • 1/2 cup of cornmeal

  • 2 tablespoons of sugar

  • 2 teaspoons of baking powder

  • 1/2 teaspoon of salt

  • 3/4 cup of water

  • 1 tablespoon of vegetable oil

  • Vegetable oil for frying

Instructions:

  1. In a large mixing bowl, combine the flour, cornmeal, sugar, baking powder, and salt. Mix well.

  2. Add the water and vegetable oil to the dry ingredients and mix until a smooth dough forms.

  3. On a floured surface, knead the dough for 1-2 minutes until it becomes elastic.

  4. Divide the dough into 10-12 equal portions and shape each portion into a small oblong dumpling.

  5. Heat the vegetable oil in a deep fryer or heavy-bottomed pot to 350°F.

  6. Carefully add the dumplings to the hot oil and fry until golden brown, turning occasionally to ensure even cooking.

  7. Remove the dumplings from the oil using a slotted spoon and place them on a paper towel-lined plate to drain off any excess oil.

  8. Serve the festival warm as a side dish with your favorite Jamaican meal.
